Taco Balls is industrial fast food that is supposed to taste like Mexican food. You&#8217;d do better buying tamales from the old lady selling them on the sly in front of the Safeway.<br />

<p>They mixed their own diet of rice, pork, beef, garlic and onions with the native food of pre Columbian Mexico which included maize, chocolate, vanilla, fruits such as guava, avocado and pineapple and some meats and local varieties of fish.</p>
<p>The traditional staple grain is corn but now, rice is as prominent and Mexico has a rice harvest in abundance. As per Karen Hursh Graber, a renowned food writer, the first introduction of rice from North Africa to Spain in the fourth century resulted in the influx of rice from Spain to Mexico from the Veracruz port in the early 16th century. Graber claims that this was among the first instances of fusion of the best cuisines of the world.</p>
<p>Some very exotic dishes are cooked in Aztec and Mayan style in villages. The ingredients come from rattlesnake, spider monkey, ant eggs and some other insects.</p>
<p>The Spanish explorers, led by Hernan Cortes, were attracted towards Mexico&#8217;s gold treasures. They not only conquered the country but brought back the food from the New World. This food then became staple diet for people across the world.</p>
<p>Bernal Diaz del Castillo, a compatriot of Cortes, recorded everything he experienced and this included details of the foods, battles and extreme conditions experienced by his compatriots. He recorded the history of Spain&#8217;s conquest of Aztec Mexico which was ruled by Montezuma. In between all this, Diaz also describes the opulence of food stores of Montezuma.</p>
<p>Cortes discovered that human flesh that had been offered as a sacrifice to Gods was an edible food in Mexico. Shocked by this ritual, he persuaded Montezuma to ban this practice.</p>
<p>Diaz noted that their diet was so rich that banning the ritual sacrifice would have been easy. Fowls, partridges, quail, ducks, rabbits and other small animals were cooked daily. Of course, there was the chocolate, in abundance. Cakes made of maize were properly brought out in plates with neat napkins. Diaz described the cakes as made with eggs and other healthy ingredients.</p>
<p>Diaz described maize plantations as omnipresent in New Spain. It was used in making dough known as masa from which came tamale and several other foods such as the tortilla. Maize was also popped and utilized in ornaments by young women during special occasions. In fact, maize was always in the focus of rituals. Diaz concluded that it was the basic of all Mexican food, although he did not deem it a cuisine.</p>
<p>Although conquistadors faced the Aztecs in Mexico, their diet was basically established in the Mayan civilization. Mayans used to worship corn and developed agricultural tools and procedures to grow corn.</p>
<p>Mayans were skillful farmers and could cultivate most of their staple food such as maize, beans, chilies, tomatoes and squash. Fruits and plants always grew in plentiful. Diaz especially mentioned prickly pear in his travelogues. Spirulina, an algae growing on water, was a major source of protein. A light alcoholic drink, Pulque, was made from the Maguey plant.</p>
<p>Beans were extremely vital to Mayans and other indigenous cultures and they used to plant corn and bean in the same hole, so that the bean could creep around the stalk of corn. Another type of bean, the scarlet runner bean, was grown in the central highlands of Guatemala and Mexico. Nowadays, people in Yucatan and Veracruz favor black beans while those in north favor pink ones.</p>
<p>Yet another important crop was the small amaranth seed which was raised in floating gardens by Aztecs. It is not very popular now as it was a part of cannibalistic ritual of Aztecs and the Spaniards did not favor it. Both maize and amaranth was used to prepare dough and dedicated to Gods. Several people used to eat pieces of dough, among them the humans who were to be sacrificed.</p>
<p>Tomatoes made their way from South America to Mexico while chilies in various varieties grew in plentiful. These are still the most vital ingredient in Mexican cooking and are used in sweetening or adding a punch to the dish.</p>
<p>Cortes reported seeing wild turkeys in the markets of Mexico City. In some Mayan excavations in the Yucatan and Guatemala region, bones from oscillated turkeys were found. These were found near the northern region of Mexico and are relatively smaller with peacock like spots. These were named pavo meaning pea hen by the Spanish.</p>
<p>While local ingredients provided them staple foods, it was the cooking procedures of the Mayans which provided them a healthy diet. They learned to cook corn with lime, steep it and remove the kernel. The lime released many nutrients from the corn which could be used by the human body. Even though they were not aware of vitamins, their cooking methods gave them a nutritious diet.</p>

<p>The Spanish explorers introduced the Old World foods into the diet of the Indians. Maize was not replaced but the diet became richer. The Mexican cooking as we know today originated from this fusion of old and new ingredients.</p>
<p>Amongst the most vital introduction were domesticated animals. Pigs were the most popular ones as they were self fattening and easy to transport. These provided meat and lard which made the most sweeping change to the Indians&#8217; diet. Mexicans never fried food until the introduction of pork.</p>
<p>After pigs, chicken, sheep, goats and cattle too assimilated and were grazed mainly in the central and north central regions. The traditional Mexican dishes that we see today appeared only after the conquistadors brought them.</p>
<p>The Spanish brought new grains such as wheat which gave rise to wheat tortillas. Sugarcane was brought from the Caribbean; Cortes himself had large areas of lands for growing sugarcane.</p>
<p>The Spanish took the Caribbean route to come to Mexico and this too influenced Mexican cooking. With Spanish flavors beginning to assimilate with the Indians&#8217;, the cuisine as we know today begin emerging. This was the comida novohispana. Frijoles, quesadillas and mole sauces emerged. The foods remained the same after independence of Mexico and the regional cuisines developed.</p>
<p>While the Spanish came as explorers, they transformed into conquistadors by forcing out the Aztecs. Hence, the Europeans dominated a civilization created by the early people. But how did the local foods survive? Probably, because of extreme poverty.</p>
<p>With extreme poverty, malnutrition and starvation normally follows. Mexico was always rich in nutritious foods. Even though the Spanish didn&#8217;t practice slavery, a caste system was created swiftly in Mexico. The pure Spanish occupied the top while in the bottom lay indigenous people. In this structure, each caste was represented by a food. For instance, wheat bread was preferred by the Spanish, while the corn stayed as the staple food. The wheat tortilla was cultivated in the northern region and thus affected cooking in the border areas.</p>
<p>Mexicans at that time generally lived on the streets. When they had to eat, they found that the native stuff was sold at cheap prices. Women traveled the streets and set up small fires to sell food. There were also grilling stands on every nook and corner. This was the Mexican food as it used to be cooked centuries before. <p>The elite class accepted these foods when dining with family but not outside. They considered these native foods as valuable, yet these should only be eaten in private.</p>

Although these recipe books indicated that no one was consuming native food, most of the readers of such books were housewives. These ladies all had native cooks who were largely illiterate and learned their skills from older generations&#8217; recipes. Hence, the native cook was making foods which the cookbooks disdained. The Mexican food thus survived.</p>

I would think TeX Mex, would be dishes that are American but using Mexican spices , or herbs to give it the Ethnic flavor, it may not be different at all, I lived in both Texas and Colorado, did not find much of a difference between each. It s just different from Mexican food, based on where the dishes originated from. That would be the difference.</p>

<p>Nigerian Cuisines – the flavors of Africa</p>
<p>Nigeria is a beautiful country named after the &#8220;Niger River&#8221;, a River that functions for the country as blood for body. It is a &#8220;God Gifted&#8221; main transportation way, for the inhabitants of the country and neighboring lands. The river is also main source of water to cultivate crops, the heart of agriculture. Also, the influence of Niger River is deep and visible on Nigerian Cuisines&#8217;.</p>
<p>River Niger is the main source of excellent and fresh river fish, including carp, Nile, catfish and Perch. Although Nigerian cuisine takes contributions from all the variety of cultures and ethnic groups within the country but also, it maintains its uniqueness from other African food. There is a variety of tastes that are derived from different cultures and norms, that exist in perfect harmony with each other within the Nigerian society. For example, in the Muslim majority areas towards the north (religiously Pork is forbidden in Islam) there is a lot of different vegetarian dishes, rice, barbecues and kebabs. A common meal in the northern region of Nigeria includes brown rice, beans and sorghum. Whereas, in areas close to the river, fresh sea food makes the main ingredient.</p>
<p>The ethnic groups, Hausa and Yoruba make up around 21 percent of the population; the Igbo people are 18 percent; the Fulani around 11percent while Ibibio make up to about 5 percent of the population. Each of the tribes, groups and religion has a different &#8220;special dish&#8221; depending on their beliefs, customs and traditions. However, &#8220;tea culture&#8221; is common among most tribes.</p>
<p>The second main contributing factor in the variety of food in Nigeria is the season. Such as the foods available in &#8220;hungry season&#8221; (season before the rains, usually Mar/April) is different from what is available in &#8220;the season of surplus&#8221; (season following harvest generally October/November).</p>
<p>Sweet dishes in Nigeria are mainly fresh fruits or Fruit cocktails enjoyed year-round. As a large part of Nigeria lies in the tropics the country is richly blessed with many seasonal fruits such as mangoes, oranges, bananas, melons, grapefruits, limes and pineapples.</p>
<p>Gari, dumplings and yams are popular side dishes in the people from the eastern part of Nigeria (mostly Igbo/Ibo). Here, let me tell you that African yams are different than Western yams (pale, barely sweet) and make the most important part of Nigerian diet. Yams are usually eaten in place of potatoes.</p>
<p>The culture and people here are warm, welcoming and open hearted. <strong>Ingredients</strong></p>
<p><strong>Pico de Gallo</strong></p>
<p>2 medium tomatoes, diced<br />
1/2 cup diced Spanish onion<br />
2 teaspoons chopped fresh jalapeno pepper, seeded and de-ribbed<br />
2 teaspoons finely minced fresh cilantro<br />
Pinch of salt</p>
<p><strong>Guacamole</strong></p>
<p>2 small or 1 large Haas avocado<br />
2 tablespoons sour cream<br />
1/4 cup diced tomato<br />
1/2 teaspoon diced jalapeno<br />
1/4 teaspoon chopped fresh cilantro<br />
1/4 teaspoon lemon juice<br />
1/8 teaspoon salt</p>
<p><strong>Chili Queso</strong></p>
<p>3 ounces ground beef<br />
1 teaspoon all-purpose flour<br />
pinch of salt<br />
pinch of ground black pepper<br />
16-ounce bottle Cheez Whiz<br />
2 tablespoons milk<br />
1/2 teaspoon chili powder<br />
1/2 teaspoon cumin<br />
1/2 teaspoon paprika<br />
2 pounds ground beef<br />
4 large sesame seed buns<br />
2 cups iceberg lettuce, shredded or chopped thin<br />
2 tablespoons mayonnaise<br />
1 green onion, chopped<br />
16-20 tortilla chips<br />
2-3 fresh jalapenos, sliced</p>
<p><strong>Preparation</strong></p>
<p>First make the pico de gallo. All you have to do is combine all of the ingredients for the pico in a small bowl and mix them together well. Cover bowl and chill in the refrigerator.</p>
<p>Now for the guacamole. In a small bowl, mash up most of the avocado, but be sure to leave several unsmashed chunks. Add the remaining ingredients for the guacamole to the avocado and mix well. Cover bowl and chill in the refrigerator, next to the pico.</p>
<p>Next we&#8217;ll make the chili queso. In yet another small bowl, mix together ground beef, flour, a pinch of salt, a pinch of black pepper, and a pinch of chili powder. Use your hands to work the dry ingredients into the ground beef.</p>
<p>Brown the beef in a small skillet over medium heat for about 5 minutes. Use a spoon or spatula to crumble the beef as it cooks.</p>
<p>Cook until it&#8217;s brown, then set aside.</p>
<p>Melt the Cheez Whiz with 2 tablespoons of milk over low heat. When milk and cheese has been combined, add the remaining queso ingredients. Heat while stirring often until cheese is smooth and creamy, then cover saucepan and remove it from the heat.</p>
<p>Pre-heat a griddle or large frying pan over medium heat. Lightly butter the face of each bun and brown the buns face-down on the heat.</p>
<p>Separate the ground beef into four 1/2-pound portions. Roll each portion of meat into a ball and then pat the meat down into a circular patty slightly larger in diameter than the hamburger buns. Cook the hamburger patties for 5-10 minutes per side, until done.</p>
<p>Lightly salt and pepper each burger patty.</p>
<p>Build the burger open-faced in the following order starting with the bottom bun:</p>
<p><strong>On The Bottom Bun</strong></p>
<p>1/2 cup shredded lettuce<br />
hamburger patty<br />
2 tablespoons chili queso<br />
4 or 5 crumbled tortilla chips<br />
2 teaspoons green onion<br />
On Top Bun:<br />
1/2 tablespoon mayonnaise<br />
2 tablespoons pico de gallo<br />
2 tablespoons guacamole<br />
4 jalapeno slices</p>
<p>Serve burger with extra queso and guacamole. May also serve french fries on the side and use the chili queso for dipping.</p>
<p>Makes 4 burgers.</p>

I have never done a large pork shoulder before, this is about 7 pounds. I have had a Puerto Rican friend make an AWESOME pork once, I think they used moho or something on it? I can cook it on a chargriller charcoal grill..I dont have a smoker box but I can make a smoke pack with foil or something if that would be part of the recipe. I can&#8217;t wait to eat this thing! I cook a picnic pork shoulder in the crockpot once a week. I place the whole shoulder in the crockpot put it on low for about 8 hours. You can place an onion in the pot and a small amount of water as the shoulder will give off a lot of fat and you dont want it too boil over in the pot. Little salt Little Pepper and you are eattin sooooo good. <p><strong>Hickory and Bourbon Smoked Rib Roast</strong></p>
<p><strong>Ingredients</strong></p>
<p>15 pounds charcoal briquettes<br />
2 pounds hickory wood chips<br />
1 cup bourbon whiskey<br />
1 (4 pound) standing rib roast, bone in<br />
1/2 cup steak seasoning</p>
<p><strong>Preparation</strong></p>
<p>Start at least 10 pounds of the charcoal in a torpedo style smoker. You need a fairly hot fire. Fill the secondary pan with cold water, and wait for the coals to turn white. Soak hickory chips in bourbon with enough water to cover. Rub the roast liberally with steak seasoning, being sure to coat all surfaces.</p>
<p>When the coals are ready, place the roast on the top grate. Throw a few handfuls of soaked hickory chips onto the fire, and close the lid. Check the fire every 45 minutes or so, adding more charcoal as needed to keep the fire hot. Every time you check the fire, add more wood chips.</p>
<p>Cook for 8 to 10 hours, or to your desired doneness. Use a meat thermometer to check the roast. The meat tastes best when rare: 145 degrees F (65 degrees C), but cook to your liking.</p>
<p><strong>Tex-Mex Smoked Sausages and Rice</strong></p>
<p><strong>Ingredients</strong></p>
<p>1 (14 ounce) package Hillshire Farm® Hardwood Chicken Smoked Sausage, cut into 1/2-inch thick slices<br />
1 large zucchini, sliced<br />
2 cups frozen corn with red and green bell peppers and onion, thawed, drained<br />
1 (15 ounce) can black beans, drained, rinsed<br />
2 cups cooked white rice<br />
1/2 cup salsa<br />
1 teaspoon chili powder<br />
1 cup shredded Mexican blend cheese</p>
<p><strong>Preparation</strong></p>
<p>Spray a large non-stick skillet with no-stick cooking spray. Add sausage, zucchini and corn mixture; cook and stir over medium-high heat for 8 minutes or until vegetables are cooked and sausage is heated through.</p>
<p>Stir in black beans, rice, salsa and chili powder. Cook and stir for 5 minutes or until heated through.</p>
<p>Sprinkle with cheese and cilantro (if desired); just before serving.</p>

<p><i>Answer by Carolina</i><br/>Depends entirely on the recipe! Sort through your favorites and look for ways to make those easier and less expensive.<br />
If you get a good curry mix, it can make it easier.  Also, stock up on cans of coconut milk.<br />
One of my favorite Indian foods is the potato and vegetable mixture, whether with cauliflower, eggplant, squash, etc.<br />
Saute potatoes, add any other vegetable and a small amount of curry powder and a bit of coconut milk to moisten. (you can divide the coconut milk by putting into an ice cube tray. Once it is frozen, pop the cubes out an put into a zip loc bag in the freezer, Take out only what is needed). Cook until the other vegetable is tender, adjust seasonings as needed. Serve with rice.<br />
Chicken&#8230; marinate in yogurt overnight, roast with seasonings to approximate tandoori chicken.<br />
Rice&#8230; cook regular rice, toss in a handful of small frozen peas before serving. The steam from the rice will slightly cook them.  If you like more seasoned rice, add a bit of curry powder to the water.<br />
Desserts&#8230; make rice pudding (kheer) from a standard recipe. Add some chopped raisins and a few crushed pistachio nuts.<br />
Bread&#8230; Indian bread (naan) is very good. Substitute some lavash (found in most large grocery stores) or even flour tortillas. Lighly moisten, heat in microwave a few seconds. Lightly spread with butter.</p>
